How I Cheated My Way To The Best Tiramisu Ever

It all began in 2007, when I was living in a city where finding mascarpone was nearly impossible. I had a strong craving for tiramisu, but I could not find the essential ingredient in any of the supermarkets. However, I didn't give up. Instead, I took matters into my own hands and created my own version of tiramisu, which I call "Tipumisu." Tipu means "cheat" in Malay, and that's exactly what I did - I cheated my way to a delicious dessert.

The Tipumisu dessert turned out to be a hit, and my whole family loved it. They couldn't believe that the cream cheese I used wasn't actually mascarpone - it was that good! To make it even better, I had to tweak the cream cheese a little bit by using custard to replicate the taste of mascarpone, which is more creamy and light.

But I didn't stop there. I also substituted the traditional whipping cream with non-dairy whipping cream, which added sweetness and smoothness to my substitute mascarpone cheese. Non-dairy whipping cream is also lighter and easier on the stomach, making it a great alternative for those who get bloated easily from too much milk.

I have always been a master at substituting ingredients that are not readily available, and that's where my cake comes in. I replaced the ladyfingers biscuit with a cake because ladyfingers were also an impossible biscuit to find back then. At first, I experimented with sponge cake, which was a soft moist chocolate cake from my mom's recipe. However, with my age and my focus on healthy living, I needed a healthier alternative for the base.

That's when I developed a cake recipe that has no cholesterol, no butter, and no eggs. This cake recipe is as healthy as it can get without jeopardizing the taste. It's so easy to whip up, especially if you're short on ingredients and rushed for time. 

The key is to mix the cake batter for a full minute to give it time to form long strands of gluten. This creates a strong structure for the cake that won't crumble. 

Steaming the cake makes it moist and prevents any cracking on the top. And the best part? You don't have to worry about the cake drying out or over-steaming it - it's foolproof.

Now, let's assemble the tiramisu. Traditional tiramisu contains alcohol and some kind of coffee flavor, but I have substituted this with coffee liqueur. If you don't have this on hand, you can use a coffee milk drink instead. Although I don't keep coffee in my kitchen anymore, I do occasionally give myself little treats of indulgence like this.

I was a little worried that the no-egg, no-butter cake might not pair well with the coffee liqueur and mascarpone substitute. However, it turned out to be something I didn't have to worry about so much. The result was an incredible coffee and chocolate-flavored layered dessert that is BETTER than the classic.
