What kind of noodles puff up in oil [ deep fried noodles ]

Have you ever wondered which noodles puff up the best in oil? In this video we tested 6 type of noodles. We will show you which noodle is the best puffer!

You do not even need to dust them with corn flour. Just drop them into hot oil and Wala!

The key to crispy noodles is having the oil HOT enough so they expand immediately.

For the Rice Vermicelli and the glass noodles we made them more manageable by tying them up

Place the oil in a wok.

Vegetable oil, peanut oil, canola oil?? It does not matter. Any oil will do.

Heat the oil over medium-high heat. Once the oil is ready test with a noodle or two. If it puffs up that means your oil is ready.

Time to test our noodles! Our list from worst to the best

Starting with No 6

Instant Maggi Noodles. They DO NOT PUFF UP. Probably because they have already been processed for instant cooking.

No 5 is Fresh yellow noodles.

They do puff up but take time. These noodles contain moisture so they take time to dry up and puff up. You may need to reduce the heat to medium to avoid burning and make sure to keep flipping the noodles. It should firm up nicely as you can see here.

Crispy and crunchy

No 4 Fresh Kway teow or flat noodles

Same like our fresh yellow noodles. They take time to puff up so lower heat is a must or else the outside will burn first before the inside is crispy. When this happens you will get a chewy noodle instead of a crispy crunchy noodle.

No 3 Fresh egg noodles. The Thin type

Altho these noodles are fresh but they puff up way better than our yellow noodles or our flat noodles. 

They are much crunchier too when you bite on them.

We still at our No 3 Fresh egg noodles but using  the thicker type. Same result. Super crunchy.

So crunchy that we could not help ourselves from munching them. We had to force ourselves to stop eating our samples or else no more leftovers for our final photo shoot at the end of this video.    

No 2. Dried Rice Vermicelli our 1st runner up.

Normally Rice noodles can be deep fried as it is. However if you experience rice noodles that do not puff up, try soaking them for one minute in water. Soaking in water should do the trick in helping them to puff up.

Drumbeat for our No 1

The noodle that holds the title as the puffiest is our Dried cellophane noodles or glass noodle. Glass Noodles maybe the best but they go stale in less than 2 hours.

In terms of staying crispy the longest, the best is rice noodles. If you keep these deep fried rice noodles in a sealed air tight container they can stay fresh for a long time.

These crispy fried noodles are also delicious on their own as a snack or tossed as toppings in salad and soups.
