Edible Rice Wafer Paper Recipe


I embarked on this journey to make my own edible rice wafer paper because of my interest in making nougats.

Finding a recipe that gives you the right one is nearly impossible at least at the time of writing this article.


I have search endlessly and there is not one that tells you the right method of making an edible rice wafer paper.

The method that frequently turns up will ask you to use the bowl with clingfilm and a microwave. This method is more suitable if you are using it immediately to make a Vietnam roll. After it drys the skin will become tough and inedible. I did play around with this method and this is what I conclude. Using rice flour will give you a dry and brittle texture. Mixing it with tapioca flour makes it more palpable but a tougher skin.


I even tried using a non stick pan and pour a very thin batter on it. It was an almost hit but I could not get the batter thinner or drier. By now after a few trial and testing, I knew I needed a different method.

What I needed was an egg roll toaster or a Kapit mould. Luckily my good friend had one and was willing to loan it to  me.




100g Tapioca flour
100g Rice flour
1 cup cold water
1 cup boil water

Mixed cold water with flour. Then slowly mixed the boiling water into the batter while stirring. Put the pot on the stove and cook the batter until it thickens. We do not want the batter to be watery or else it will spill off the mould.

The above ratio is not fixed. I am still working on the correct ratio and I will update this article when I am pleased with the end result.


Place a spoonful of batter on to the toaster and let it cooked for 3 minutes. Use a butter knife to peel off the wafer. After cooling i cut them into rectangle shape and place my nougats in between like a sandwich.
